I just imported all my devices into JSS from the Apple DEP and now would like to take advantage of the Pre Stage Deployment process. Is there a document that explains how all of that works?

Once you've done that, go to Mobile Devices > PreStage Enrollment and create a new one for testing with. The options are pretty straight forward.
