I've been asked to deploy some apps as managed on all our iPads - but some people seem to have the app with their own apple ID. Does the 'convert unmanaged to managed' option fix that?
Or is my only option to ask them to remove the one they installed?

Yes, the "Convert to Managed" option in Jamf Pro should allow you to convert apps installed with a personal Apple ID into managed apps, but only if:
The app is available in your VPP (Apple School Manager/ABM) and assigned via Jamf Pro.
The app is free (this does not work for paid apps ).
The device is Supervised
When Jamf converts the app to managed, users will not need to delete and reinstall it. However, if the app was installed with a different Apple ID and it's a paid app (or outside your VPP), you will need to ask them to remove it manually before pushing the managed version.
