We will be changing our OD Master before the school year begins, and
have already re-imaged most of our Mac Books with a configuration that
has them look to the old OD Master for authentication. Is there an
easy way to replace the old OD Master info with the new? I assume it
would involve running an Unbind to OD Master script and then a Bind to
OD Master script with the new server info, but wasn't exactly sure how
to pull that off or if the two scripts could be combined. Has anyone
done this before?

+31I already have a script that does then as we had every machine bound to our master but then wanted to bind each building to specific replicas. You can just fill in the blanks and run it as a casper policy.

This script will bind the client to the new Directory Server after removing the old one first. Then in OD you just need to promote your new server to Master and demote your old one to stand alone and everything should be kosher.
