Are there any configuration profiles or tools available to restrict the use of removable media such as thumb drives and external drives? I want to be able to restrict writing to them as well as be able to log any activity. Any help would be much appreciated.

You can do this with a restrictions configuration profile under the media section. You can make them read-only or prevent them from being mounted in general. I'm not sure about doing the logging, though.
