Just finished listening to episode 102 of the Mac Admins Podcast. The guest, Armin Briegel mentioned a handy app named Erase & Install. The app is a wrapper around the startosinstall command. It's very user friendly and can detect a macOS installer anywhere on the machine. If anyone is looking for an alternative to startosinstall in Self Service this is a great solution.

Grahamn Pugh has done an "extension" of the original script that's made by Greg Neagle. We're currently using this to upgrade computers where the user is not an admin.

I just wish with the limited space available on current model macs (that our school buys) and the size of current OS installers there was a way these could be created without having to cache or download a full installer on users machines. Like a way to use the recovery drive. Just complaining for the sake of complaining.
