Hello, can someone tell me what the best practice is for re-assigning Mac Mini hardware to any functional account or another employee.. The employee had left the organization, so we had to re-assign with any re-enrollment. If we re-assign, does it affect any login issues or any

The above would depend on your setup. How the accounts are created, if the machines are domain joined, or have jamf connect or another authentication method setup. I dont think there is such thing as best practices for that, as each setup will probably be different.
