If you have a "single app mode" workflow that activates immediately after a device is enrolled into Jamf Pro and after the single app mode app is installed, have you noticed that the app is not automatically launching after enrollment of an iOS 15 device? iPadOS 15 to be more specific.I haven't confirmed on iOS yet, but I expect the same behavior. It is not until the device is rebooted, then the single app mode app will automatically launch.
