We are using are LDAP server to pull in staff credentials (login & passwords) but we are switching are email to Gmail accounts. I tried changing the emails in the JSS to are Gmail accounts for the users but they were changed back to the LDAP accounts. Is there anyway you know of to stop the JSS from pulling just the email accounts from LDAP?

You can use the mapping to edit it, eg using sAMAccountName and then appending the domain on the end.
Or if you want it totally clear empty the Email Address Field , in the mapping.
Best case is to update your LDAP/AD to reflect the changed email in the users profile.
However, it won't change casper unless you've got a script that pulls directory info on login, etc.
