Mac OS updates don't install automatically even though our config profile says they are set to do so

 

See these screenshots.  The setting in Mac OS is grayed out - but NOT checked.

    Having this same issue across our lab machines running Mojave and Catalina.

    guess you have to run it as a policy rather than a config profile

    @lmagnif , do you have a Restrictions configuration profile deployed? You should check the functionality tab and ensure that you don't have any update deferrals enabled.
