What is the recommended workflow for deploying MS Office to shared devices such as lab macs? We have been using the BusinessPro package along with the 2019 serializer but this seems to no longer work with the latest versions. We can switch to O365 licensing for computers used by only one person, but this is not ideal for lab machines as users will quickly hit the device limit for their Microsoft 365 accounts. Is there such a thing as Microsoft 365 license for shared devices like what is available on the Windows side? TIA

Both Apple and Microsoft's recommendation is for each user to have their own account on a device. In short, do not share accounts between users.
By shared devices, I'm referring to devices with multiple users, each with their own account, like a lab setting.
You will need to create a Office 2021 serializer. Office 2019 is now out of support : https://support.microsoft.com/en-gb/office/end-of-support-for-office-2019-for-mac-f2cbba0a-0773-4b2c-b417-b20b5bb2c757
