I had an issue where I had to create a local admin user named admin on a few of our computers. What is the best way to get casper to remove that account so we only have the standard user left.

Just use the built in Accounts tab in a policy. There's an option to delete an existing account. Enter the account name and let it run across all your Macs.
You could go crazy and build a Smart Group to only run it against the Macs with that account present, but I don't really see the point in a case like this, personally.
