OK, my understanding of SCEP could be written on the head of a pin. I'm looking for some sort of guide that would explain to me how to fill out those fields in the JSS si I can push the required for my iPads using SCEP to authenticate to WiFi. Nothing in any of the documentation seems to fill the bill.

+24Those fields are going to be specific to your environment. The person you want to hunt down is ther person who is in charge of your Certificate Authority and/or your Active Directory infrastructures. Find the crypto guy/gal.
A word on SCEP... SCEP isn't used for authentication. SCEP is merely a protocol for delivering certificates en mass. Certificate distribution can be tricky and often is very manual. SCEP makes it scalable. Read up on Wikipedia for an easy explanation.
SCEP is the mechanism you'll use to get certificates on devices. The certs are what'll be used to authenticate to Wi-Fi. (Typically called 802.1x)
