I have some students learning to type and a teacher has asked if the caps lock key can be disabled. I can disable this in system preferences --> Keyboards on each computer, but not sure how to push this out using JAMF.

I've never actually tried this...
I would imagine these settings are either stored in some sort of db or plist...
You could try finding what gets changed when you make the "No Action" change on the "Caps-Lock-Key" and see if you can run that manually from terminal.

Could this be accomplished using managed preferences?

I used Composer to monitor file system changes and found the plist file. The only problem is it is in the ByHost folder as .GlobalPreferences with a UUID. It might have to be scripted, otherwise it could be pushed out using managed preferences or mcxtoprofile, an external, command line tool. I will update with more information as I get it.
