I discovered this blog post that provides a way to disable the home button on a device using a configuration profile:

This makes iOS devices function as a kiosk, much like some of the iPads in the Apple Stores. This option is not normally possible through iPCU, Configurator or Casper Suite. I have to wonder how many other configuration parameters are possible through undocumented profile settings.
