RIght now the iPad lock screen gives me 2 options. auto lock after 2 minutes and after 5 minutes.. I want to have it always on and no auto lock. What am I missing?

You might be deploying a Configuration Profile with a Passcode payload, with 'Maximum Auto-Lock' configured..
