We had an incident that required us to do a snapshot rollback on our Jamf Pro instance (snapshot was about 32 hours old and no major changes happened before it) and since doing so, no one is able to log into the Jamf gui (users attached via LDAP if that matters), and we just get a standard 401 error.
I have no idea what to do about this or where to even start looking.

When you first set up Jamf Pro, you must have created an initial local account. The first account during setup. Do you know the name/password combo for that account? Hopefully so. If you do, log in with that, and check to see if the LDAP connection is still working. It might have become broken when doing the restore or rollback. If it's disconnected from your LDAP, that would explain why no-one with an LDAP account can log in.
