In Jamf Pro, choose Devices > PreStage Enrollments. Find the device in one of your PreStage Enrollments and remove it from the scope. This will prevent the device from automatically enrolling into Jamf Pro.

Alternatively, log in to your Apple Business Manager or Apple School Manager account and either unassign or disown it.

You may also need to wipe the device using itunes to remove the config from the device. I've found that a simple reset doesn't always do the clearing you need to get it out of jamf.
