Modify Route Table for IKEv2 VPN

Hi,

We're currently using an IKEv2 VPN using the native macOS VPN Client, and this is mostly working well for us, however we need to modify the route table when this connects due to a subnet overlap.

I've seen solutions that use ip-up, but don't believe this applies for IKEv2, does anybody know how this can be achieved?
