Does anyone know how I would go about putting users into building / department by how they are setup in Open Directory? I tried setting the building and department field but that doesn't seem to flow over to JSS.

+33You'll need your LDAP fields to match the fields in the JSS. You'll also want to be looking at OD replacements as it's days are numbered.
