I would liked to know what procedure you used when your computers returned to stock, in particular if your computers are on DEP.

We do that too. In fact it is mostly about DEP.
Once Erase and install is done, enrollment is immediate with Big Sur because we have checked the option "Automatically advance through Setup Assistant (macOS 11 or later only)".
I wanted to know if anybody are using this option and how they handle returns to stock.
Do they enroll computers before they return to stock?
