IMO, there is no need to update the document...but there is a need to adapt Jamf products to support MySQL versions, that are released on the market since approx 1 year now (feature request open : https://www.jamf.com/jamf-nation/feature-requests/5099/create-innodb-tables-by-default-+-support-mysql-5-7)

I can manage to install all the requirements but JAMF should update there product support.

hmm As I am running into an issue with the JSSDatabaseUtil.jar... I am wondering if I was correct saying Ubuntu 16.04 is supported....

I cannot find it in the documentation... :(

I would suggest asking jamf support about if they have performed any internal testing on the "unsupported" versions (and their results so far) and/or if they are aware of any customers (and their experiences) with the "unsupported" versions. Granted, most customers will stay with supported, recommended versions; however, there is usually always a customer taking it a step further. :-)

I would agree with you on updating the requirements. From what I have heard "unofficially", MySQL 5.7 does work, but since jamf has not updated the document and make it "supported", it is prudent for our enterprise environment to stay with the older, "supported" MySQL 5.5/5.6.
