Is there a simple process out there that allows the external USB drive to just boot via Option Boot and the process installs the OS and the applications without any user interaction?

Create a NetBoot-like set on the USB drive with auto-login turned on for (prob the root user) with Casper Imaging as set to open on login, save credentials of a imaging user in the keychain, set up an autorun image in Casper, and voila! If you need more details, I am sure the community can provide more specific advice.
+6The simplest way I know is to boot into the recovery partition and choose to do a re-install but set the target disk to be your USB drive.
