Is there a simple process out there that allows the external USB drive to just boot via Option Boot and the process installs the OS and the applications without any user interaction?

Yes.

Create a NetBoot-like set on the USB drive with auto-login turned on for (prob the root user) with Casper Imaging as set to open on login, save credentials of a imaging user in the keychain, set up an autorun image in Casper, and voila! If you need more details, I am sure the community can provide more specific advice.

The simplest way I know is to boot into the recovery partition and choose to do a re-install but set the target disk to be your USB drive.
