Just wondering .. I have a bunch of High Sierra machines that I need to upgrade to Catalina.
Can I go straight to Catalina 10.15.7 or do I need to upgrade to go to 10.15.2 first?

+12As long as the hardware and installed software is compatible. I don't see any reason why you couldn't. Check my response from https://www.jamf.com/jamf-nation/discussions/37237/in-place-upgrade-from-sierra-to-catalina on the scripts we used to upgrade to Catalina.
