Apple Software Update Server host hardware recommendations?

We're looking to implement a SUS and I was wondering what people use for Apple hardware with this. I was figuring a Mini, but wasn't sure if we should go with 8 or 16 GB of RAM and the hard drive size needed.

We get the 1TB Fusion drive Mini with 8gb. Works like a charm.

We upgraded an existing Mac Mini with a 1TB SSD and 16GB RAM. The Mac Mini also serves as our JSS host. External drives for Time Machine and daily Carbon Copy Cloner bootable backup.

You guys that have the RAM upgrades, have you monitored the usage? Is it using it all?

I ask because I'm at 4GB on a mini and the thing rarely uses more than 3GB. The SSD is a big improvement, I must say.
