I was able to create an extension attribute for getting the OS details on VM clients (thanks to the help of a JAMF user). I'm trying to create another extension attribute to see the application inventory installed on Windows VM machines. I found an EA for Parallels, but I'm hoping to see if there is an EA for VirtualBox and VMware.
