Anyway to "hide" by default new AppleTV channels?

Apple just pushed out a bunch of new channels to the AppleTVs.

Is there anyway to configure an AppleTV profile that automatically hides all new channels? It is a pain to have to go around to each AppleTV and manually hide new channels.

You might try 'Conference Room Display' and possibly an 'Onscreen Code' for security. This would hide the default Apple TV channels, inform users how to AirPlay to the Apple TV, and limit access to those with a line of sight view of the display.
