When i try to run Apple Classroom on a newly configured shared iPads, it tells me there in no valid education profile. Yet when I look at installed profiles it lists the EDU profile. I would really love to get this working.

You're trying to open up Apple Classroom app on a Shared iPad itself? The app is used for the teacher device and that device cannot be a Shared iPad according to Apple's documentation.
