Does anyone have a script or method that will deauthorize an office 365 seat when a computer is wiped? 

There is a pkg from Microsoft, which removes the license from the Mac, but doesn't remove that mac from the list of authorized devices on the 365 account.

You can try with Powershell.

I don't think there is anything you can do device side as this is a user licensing and administrative issue not a macOS or MDM issue. I suggest opening a case with Microsoft as this is literally Office License management, but as @karthikeyan_mac suggested, powershell is likely your only option.
