I manage a retail shop's point-of-sale iPads and the POS software they use sometimes causes weird glitches with new updates which are fixed quickly usually. I know I can delay iOS updates but I can not figure out how to delay individual app updates or I would be happy with delaying all 3rd party app updates for a certain time. Is this possible?

You can choose when Jamf checks the App Store for updates for managed apps.  You can do this globally, or on a per app basis.  I honestly haven't tested this (as I usually want the updates pushed out as soon as they are available), but I would assume the behavior is the the items in the app catalog would only push updates manually if no schedule is set.

Yeah, I have found that but not what I need. I want to be able to do the same thing with third-party apps that we can do with system updates, i.e. Delay updates 1-90 days.
