Our organization is not currently allowing AI software on any device, including using the built in CoPilot in Edge.  I found some documentation, but it isn't 100% clear on how to disable it.

Anyone have an easy way to make this happen in Jamf?

If you can manage this with a Configuration Profile, it will be documented on Microsoft's Edge Policies page. Glancing at MS's documentation I don't see an outright way to disable it with a Configuration Profile. You may need to open a case with Microsoft.

We pulled the policy file down and think we have it now, but it only blocks for users that signed into AAD in Edge.  Will be nice when we get our AI policy completed.

We are also working on AI policies, its been fun.

Apple will only, and really can only make management options for tools they create. With 3rd party tools, such as edge, it's the responsibility of the application developer to make the management options. Microsoft simply does not make the management options you are needing. I don't think we will see much management options for AI going forward, even apples management options for Apple Intelligence leave a lot to be desired.
