I'm putting this out there in case anyone searches for this error. In Apple Configurator 2, in Preferences > Server, when creating a new server, you may see an error with "Unable to verify the server's enrollment URL".
When I saw the error, I let it discourage me, and I stopped.
Don't worry, just click Next and continue being awesome.
