We want to manage New Users with a script upon enrollment and disable iCloud Drive in the Finder Sidebar. Does anyone know the defaults write command for that? No command works for us.

Not sure about the Finder plist setting, but do you want to disable iCloud Drive entirely?
Can set a profile to do this if you haven't already. CIS 14, page 47.
