Is it possible for an organization to disable the factory reset option on an iPhone? Alternatively, is there a policy or script that can accomplish this?

You can add a restriction to your iOS configuration profile to block the reset option.

You can set this:
<key>allowEraseContentAndSettings</key>
<false />
you can use iMazing profile editor, or build in gui
You can´t run scripts on iOS
+8@ssushil438- One thing to keep in mind is that if that option is gone and you have to restore the phone and don't have a backup option like JAMF reset, you will have to do a restore from the computer.
