My server certificate is about to expire and I was thinking about moving to Let's Encrypt.

Had a look at: https://github.com/sean-rabbitt/letsEncryptJSS but not sure how to configure this for my server. Running Jamf Pro on-premises, server is on MacOS X.

What's the best way to get Let's Encrypt issuing certs for Jamf Pro on macOS?

I think between this: https://github.com/sean-rabbitt/letsEncryptJSS and this: https://community.letsencrypt.org/t/installing-and-configuring-letsencrypt-on-a-mac-os-x-client-server/8407 you could get it working swimmingly. Until Apple breaks something. When Apple decided to sunset server functionality I migrated mine to a Windows VM fairly painlessly although lately I find myself thinking linux might be better.
