How/where do I set that Sonoma has to be up-to-date during automated enrollment? Can't find anything in the GUI>

    That feature is not available yet... in JAMF..

    You can achieve this for the purpose of deploying a Mac (or not, if the minimum version requirement is not met) via Zero-Touch using Setup Your Mac.
