I have read that iPads wont do automatic updates as long as they are in Single App mode. Can someone confirm this? We will hold test at university with those and it would be really bad, if an iPad started an OS Update during the test by some mistake. But if that is true it would not be an issue, as they are all in SAM.

Yes, you are right. What we do is to get around is, we make it as a smart group where if the device is less than the current version, it will get out of Single App Mode and then put the lock back on when it gets updated.
Only downside is, the app closes and you have to wait till the iPad updates.

You would create a smart group with the criteria of OS Version is less than "desired OS."
And it will scan all the devices in the Database. You can also add in the criteria to select models (Apple TV or iOS / iPad OS devices) if you want to filter even more.
And then I would just put this group in exclusion list. So that the App Lock doesn't apply to them or gets removed if they meet the Smart Group Criteria.
