is there a way to receive a notification when an admin does some operations?
For example, I would like to receive an email or something similar when an admin adds a new policy.

+5Yes there are ways to get notification when changes are done to any policy or configuration profile directly from JAMF
Click on your account name on the top and click on the notification and select the option there to be notfied.
For getting a notice if any policy is created by an admin you will need to rely on smart Groups
