interesting question, in the past; when myself or someone on the team had to remotely look at a an iPad or iPhone gui, we have gotten the end users to hook the device up to a Mac which we can remote into; you can then live capture the screen of the iOS device into quicktime player; allow you to at least see the screen, allowing to assist easier

Thanks for the response! I did not know that was a thing, but unfortunately, these iPads will be locked in stationary stands, and not all our staff carry their Macs around. Thank you, though, again for informing me of something new!

The BeyondTrust (nee Bomgar) iOS client has this feature as well. We also have MS Teams widely deployed and it supports screen broadcasting on iOS, so it is often our goto for remote support. Webex and Zoom are other options.
