Here are the servers added to the Device Setup section of the revised article, and which ones have issues with SSL inspection :

humb.apple.com - Appears to be new for macOS Catalina and part of the handshake process for Device Enrollment. Required whitelisting in SSL inspection system for installation of MDM configuration at the Remote Management stage of Setup Assistant to succeed.

static.ips.apple.com - Not sure what this one is for yet.

tbsc.apple.com - Requires whitelisting in SSL inspection system for BridgeOS updates to successfully download (symptom was failures of macOS Mojave or Mojave Security Updates that attempt to install a pre-requisite BridgeOS update).
