Is there a way of wiping a iPhone with a script ? let me know if this is possible.

No, you must send a "Wipe Device" command using Jamf Pro. Mobile devices do not contain the Jamf binary, so scripts and policies do not apply.

For all Apple platforms you can use the MDM command's to wipe the devices, this is your only option for everything but macOS. Scripts can only be run on macOS.
