How do you guys handle teachers that refuse to return their old MacBooks?
is there a policy or script out there where I can slow the MacBook process down? I’m hoping they will think that the laptop has issues and just return it back to us.

I could not agree more. i rarely advise the use of a technical solution for a non-technical problem.
MDM command > Lock it out
What Karl said above. Send a MDM Command to the machine to lock it with a passcode. That will render the machine useless until the passcode is entered.
