I want to make sure my Mac users cannot upgrade to Lion the day it comes
out. Especially because I am certain it will come out the day I leave for
vacation.
So I plan to block the installer in Casper's Restricted Software.
I am just not sure what the name of the process will be. My best guess is
"Mac OS X Lion"
What are other admins doing/not doing?

Do your users have local admin access? If so, that's the problem; Lion is just one of a vast array of software they can install without your knowledge or permission. They will be able to install Lion regardless of any restrictions you try to implement.
If they don't have admin access, they can't install Lion (or anything else) from the App Store.

what about removing app store.app if it exists? that will fix things right up I would expect.
or
chown –R root:wheel /Applications/App Store.app
chmod –R 700 /Applications/App Store.app
then at least somebody would have to think to run it.
