Caching server versions

This is probably a stupid question but Apple's documentation for Caching server doesn't consist of much more than "Turn it on" and I can't find any info anywhere else. I finally got confirmation that our Mac Mini server running 10.11.6 is properly caching and serving the caches to Macs on our complicated network. I was able to confirm this by watching the Stats graph and the Logs for Caching as I had several Macs running 10.11.6 do a software update. Now I'm trying this with a Mac running 10.12.1 (because I know there a 10.12.2 update out there) and I'm not seeing ANY activity on the caching server at all. No new lines in the log, no blips on the network or caching graphs.

Does Caching Server only get the updates for OSes that are the same or older than what's running on the server? Am I going to have to upgrade my server to 10.12 in order to cache 10.12 updates for client Macs?
