Changing default application for certain extensions.

I'm trying to figure out what the best way (best practice way) would be for changing the default application for an extension type. Managed pref? Profile? Script? I could see how this might be useful in different applications but ours is mainly to keep .jar files from launching. This is solely for killing Minecraft launchers. I am very interested in a one and done approach, we are way past the warning the users. Since El Cap, we are no longer able to kill / remove the JAR Launcher program because of system integrity settings. I need an effective way to cripple .jar files, being able to reverse it would be a bonus but not critical. I know this type of question has been asked but I don't think this particular method has been used. Thanks.
