Has anyone spotted a way to test to confirm system's have updated? I have a run once policy, but want to ensure things are patched on the 10.8 systems.

Smart Group to look for the package receipt? I'm not yet sure how the package receipt shows up, but I'm sure it would be there.

In a pinch, just check to see if that specific update is available to the system.

I was wondering about this too.
On Mountain Lion I see the receipt: com.apple.pkg.update.security.10.8.5.12F1026.2014.001
On Lion I see: com.apple.pkg.update.security.10.7.5.11G1076.2014.001
On Mavericks I see: com.apple.pkg.update.os.10.9.2.13C64.combo

make sure to use the criteria:
Packages Installed By Installer.app/SWU
@aamjohns package names are correct
I should also mention that updates rips out any of your previously installed system root certificates, so buyer beware.

Any reason not to use the "Available SWUs" criteria? For example, Available SWUs - has - SecUpd2014-001Lion-1.0

Yes, if you don't have your JSS configured to capture available Software Updates :)
