I'm new to Jamf and so far enjoying everything you can do, it blows away what we currently do with our mac management,
I'm now looking to do some more fancy things this involves Cisco anyconnect and RSA SecureID - I would like these delivered by selfservice but auto installed on to the device.
Would anyone be able to point me in the right direction on how I can do this / start to learn some of this more advanced deployment?

This is official JAMF100 lessons. You can start from the first point with those videos.
And your question about the application deployment
For iOS you should use Mobile Device Apps. For macOS, there are two options. One of them Mac App Store Applications and the second one is package deployment via JAMF Composer application.
If I'm not mistaken, Cisco Any Connect and RSA Secure ID applications are not available on Mac Apple Store. Therefore, you need use composer application for create new package. You can upload those packages with JAMF Admin application or you can use JAMF Web Interface.
