Is it possible to have google calendar subscriptions listed somewhere on Self Service, so the end users can simply click on a link via Self-Service and have it then add that calendar to their subscriptions?

Depending on how many calendars you want to have listed, I can see two ways of doing this.
A Self Service plugin might work. They will be listed on the left side of the Self Service window weather the user is logged in or not.
Or, you could use a policy that executes a command to open the URL of the calendar.
The benefit of the policy is that you can have a separate category for shared calendars.
