I have 40 devices for a new school here in New Zealand but in setting up the Jamf account and loading the devices onto the Jamf account, they're going into LA's timezone. is there any way to change this from Jamf, to does it need to be done from the device itself?

That's a device setting.
It is usually caused by the device not having Location Services enabled, it can't determine its current location and sets it to Cupertino by default.

Assuming you’re using DEP, you should look into your DEP PreStage Enrolment. Possibly you’re not prompting for location services be turned on during enrolment. This would mean the device won’t set time zone automatically.
