When will JAMF implement a job tracking suite where you can create service calls within a Business ?
ie. Zendesk, Samanage, Freshdesk

You already can. Create a JSS user with the email of your Zendesk (or whatever) support suite and key smart groups to notify on changes.

JAMF won't do it until you get all of those suites to use a common API. So, never.
