We have iPads running 10.2. On these iPads we have them setup without access to the App Store. Students get their apps from Self Service. Since the update to 10.2 and the ability to remove/hide the default apps we have had students remove iBooks. Normally you would restore this by going into the App Store and reinstall it but we do not have the App Store as an option and do not want it available on the student devices. Is there another way to restore the default apps without wiping the device or a way to add them to Self Service?

Ultimately, this is an Apple feature request. I have a ticket open with Apple on this and have been told they may address it in a future release. I'm hoping that release is 10.3, but we'll see.
